HACCP - The food hygiene standard
Our chefs follow HACCP (Hazard Analysis Critical Control Point) hygiene standards. This is a method that helps prevent and identify hazards related to food hygiene practices. This international method is a benchmark in the food industry.
Prevention
To prevent risks, our cooks follow the following 4 basic principles:
- Wash - Clean: hands, surfaces, utensils, ingredients
- Separate ingredients during preparation: meat, fish, and vegetables are first prepared separately. Any ingredient that should be discarded does not contaminate the other ingredients.
- Cook at the correct temperature: ensuring each food item is cooked thoroughly is essential to kill any germs that may be present.
- Packaging & refrigeration: preparations that will not be consumed immediately are packaged appropriately (Tupperware, covered dish, etc.) and refrigerated or frozen.
